In preparing for Thanksgiving, I wanted to experiment with this recipe to add other options for sweet treats. I found on www.allrecipes.com. I did substitute a few ingredients to try and make them a little healthier, yet keep the flavor. So, here it is….I’ve added the nutritional values for the agave and earth balance so you can see for yourselves that they are better, healthier choices. I got both the Blue Agave Sweetner and Earth Balance at Trader Joe’s. I also added walnuts for an extra nice crunch and because they really are so good for you too. Oh and did I mention that the house smells good….
Oatmeal Raisin Cookies
3/4 cup Organic Blue Agave Sweetner (instead of white sugar)
3/4 cup earth balance natural buttery spread (instead of butter)
3/4 cup packed light brown sugar
1 tsp. vanilla extract
1 1/4 cups all purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. kosher salt
2 3/4 cups rolled oats
1 cup raisins
1 cup walnuts
1) Preheat oven to 375 degrees.
2) In a large bowl, cream together, earth balance buttery spread, agave sweetner, brown sugar until smooth.
3) Beat in eggs and vanilla until well incorporated & fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats, raisins and walnuts. Drop by teaspoonfuls onto greased cookie sheets.
4) Bake 8-10 minutes in the preheated oven or until golden. Cool and remove to sheet or wire rack.
