Bad-Mouthing Gluten

It is alarming news to find out that Americans spend about 40 billion dollars a year on weight-loss products and programs. That is distressing, then add to that the obesity issues in this country, it then becomes overwhelming. And what happened to quality food over quantity? The goal should be to make a quality meal at home more frequently by using your own wholesome ingredients as opposed to ordering pizza, but many times the pizza wins out, simply because of time-constraint or because its just more convenient.

Then there are thousands of diets out there which may eliminate proteins or no dairy or no carbs or no gluten. I found this article in Time magazine in reference to gluten and found it fascinating that 46% of people who bought gluten-free products thought that they were healthier, not because they really needed it like people who suffer from Celiac’s disease. So, what happened to the mantra I heard growing up when Mom would say, “you can eat everything in moderation”. I guess those days are over, but can they make a comeback? What do you think?
